Joshua Weissman, who built an audience online by recreating popular fast food and comfort dishes, opened his first restaurant, Ben & Lynn's, on Saturday in an East Austin neighborhood. He named the restaurant for his parents, and the menu draws directly from his mother's Sunday fried chicken.
Ben & Lynn's operates out of a white house on the corner of East César Chávez and San Saba streets. A brown garden fence surrounds the property, and the location offers ample outdoor seating; customers order at the counter before finding a seat while country music plays inside.
The menu focuses on two chicken entrees: the B&L Classic sandwich and B&L nuggets. Weissman chose to use only chicken thighs for those dishes because he said they retain more juiciness and flavor. French fries and soft serve are available as accompaniments.
Weissman has been posting food content on YouTube for about eight years, and until the restaurant opening fans could only experience his cooking through video. He described the move into a physical space as driven by his interest in hospitality and a desire to serve people directly.
When doors opened at 11:30 a.m. on opening day, students from the University of Texas waited in line. Radio-television-film senior Tanner Kopel said he became a fan through Weissman's "But Better" series and noted Weissman's previous kitchen experience at Uchiko and Odd Duck. Kopel said he expected higher prices but found the cost reasonable for the quality.
Radio-television-film junior Austin Keith described the sandwich as well sauced with a crisp exterior and highlighted the dill ranch as a favored accompaniment. Both students saw the venue as a casual spot suitable for groups or families.
Weissman said he selected East Austin because of the neighborhood's recent development and the concentration of nearby restaurants. Ben & Lynn's offers a chance for locals and fans to try Weissman's fried chicken in person after years of online videos.
